I am so excited to share this deliciousness with you guys! It's really, really, really TASTY. The best part is that this Salmon in Roasted Pepper Sauce doesn't require any fancy ingredients and doesn't take much time to make.
ABOUT THE ROASTED PEPPERS
For this recipe, you will need some roasted red peppers. You can use store-bought roasted peppers from a jar or roast the peppers yourself. Both options are good, so you have a choice.
If you prefer to buy jarred roasted peppers, you can find them in all major grocery shops, usually in the aisle with the pickles or near the olives. You can also buy roasted peppers on Amazon.
PREPARATION OF SALMON IN ROASTED PEPPER SAUCE
1. Season the salmon fillets with salt and pepper.

2. heat the oil in a medium non-stick pan over a medium heat. Fry the salmon fillets, flesh side down, for 5 minutes on each side or until cooked to your liking. When cooked, remove from the pan and set aside.

3. Put the butter and garlic in the same pan. Fry for 1 minute, then add the roasted peppers and fry for a further 2 minutes.

4. add the spinach and allow to wilt.

5. reduce the heat to low and add Half & Half, Parmesan, red pepper flakes, parsley, salt and pepper. Stir and bring to a simmer.
Preparing the cream sauce for salmon
6. return the salmon to the pan and spoon the sauce over each fillet.
Add the salmon to the cream sauce.
7. Serve over pasta, rice or steamed vegetables.
INGREDIENTS
2 salmon fillets with skin (approx. 1 lb.)
Salt and pepper to season
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic, finely diced
4 oz. roasted red peppers, diced
4 cups fresh baby spinach
½ cup half & half or heavy cream
¼ cup grated parmesan cheese
¼ teaspoon red pepper flakes or to taste
¼ cup chopped parsley
Salt and pepper to taste
INSTRUCTIONS

Return the salmon to the pan and spoon the sauce over each fillet.
Serve with pasta, rice or steamed vegetables.
