Ingredients:

2 cups whole wheat flour 1 tsp baking powder 1 tsp baking soda 1 tsp ground cinnamon 1/2 tsp ground nutmeg 1/4 tsp salt 1/2 cup unsweetened applesauce 1/2 cup honey 2 large eggs 1 tsp vanilla extract 2 cups grated carrots 1/2 cup chopped walnuts Cooking spray Instructions: Preheat the oven to 350°F (180°C). Spray a 9 x 5-inch loaf pan with cooking spray. 
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. 
In another bowl, whisk together the applesauce, honey, eggs, and vanilla extract until well combined. 
Add the wet ingredients to the dry ingredients and mix until just combined. 
Fold in the grated carrots and chopped walnuts. Pour the batter into the prepared loaf pan and smooth the top with a spatula. Bake for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Remove from the oven and let cool in the pan for 10 minutes. Use a knife to loosen the edges of the loaf, then turn it out onto a wire rack to cool completely.
